Proscuitto and Egg Cups

If you need to make a simple breakfast to impress, this is your dish.  It's beautiful and tasty - and super-easy.  You may be able to substitute thinly sliced bacon for the prosciutto, but it's worth buying the prosciutto for.  Serve with some toast and cantaloupe.

Proscuitto and Egg Cups
serves 6

cooking spray
12 thin slices prosciutto
4 oz. parmesean blend
6-8 leaves fresh basil, torn
12 eggs
fresh pepper

Coat muffin tin with cooking spray.  Place a prosciutto slice into each tin.  Divide half of the cheese and basil among the cups.  Crack an egg into each and add remaining cheese and basil to the eggs.  Bake at 375 degrees until set, about 15 minutes.  Egg should be be set, but not overcooked.  Season with pepper.  Loosen around edges with knife to unmold.
